Supporting in-house sauce production at Feature Foods
Cynthia Riddle, Conestoga Food Research & Innovation Lab
Feature Foods partnered with the Conestoga Food Research & Innovation Lab (CFRIL) to support scale-up and development of mayonnaise and whipped salad dressing formulations for in-house production. The goal was to recreate the company’s existing products while giving the team greater control over ingredients, production processes, and supply chain flexibility.
Through a series of formulation trials and collaborative feedback sessions, CFRIL developed matching formulations and provided processing guidance suitable for Feature Foods’ production environment. The project also delivered supporting materials such as ingredient lists, nutrition facts panels for Canadian and U.S. markets, and technical documentation to assist with implementation.
By enabling in-house production, the work helps Feature Foods reduce ingredient costs and rely less on external suppliers. The project provides the company with greater flexibility in sourcing ingredients and supports long-term efficiency in its manufacturing operations.
Funding for this project was provided by the National Research Council Canada.
